Consumers are starting to realize this, expanding their understanding of “Mexican” to include specific regional fare, like Tijuana-style birria, Oaxacan mole, and Veracruz-style fish.1 Even the classics aren’t immune to this craze, with tacos proving to be just as diverse a canvas as Mexican flavors themselves. From deep-fried, saucy tacos rojos potosinos (hailing from San Luis Potosi), to fish-stuffed pescadillas from Acapulco, and stewy bowls of tacos de canastas from Tlaxcala, the possibilities are endless, and endlessly inspiring.
Trend Opportunity: Oaxacan Cuisine
The cuisine from this southern Mexican state is renowned for a focus on fresh, whole ingredients and simple but impactful preparation techniques. That makes their regional dishes both relevant and appealing to a wide array of consumers. Spicy flavors and fresh herbs are common, but a foundational starting point is mole.
2. Peppers Get Particular
It’s no secret that peppers provide unique twists and turns to Mexican cuisine. But just as regional Mexican cuisines are taking off, so are unique, complex, and, yes, spicier-than-ever peppers also heating up menus. There’s a wide range of spice preferences, but the majority of consumers age 18-34 prefer peppers on the hotter end of the spectrum.2 So don’t be afraid of heat while exploring the smoky notes of Fresno and morita peppers, the fruity flavors of aji Amarillo and aji charapita peppers, or the sweet-and-spicy delights of goat horn peppers.
Trend Opportunity: Guajillo Peppers
One pepper in particular has grabbed the attention of consumers: Guajillo. Consumers are 4 times more likely to opt for them over typical seasonings.3 While they offer an elevated, premium, authentic twist to any cuisine, they aren’t unattainable—consider pepper pastes as a simple way to introduce them to your operation immediately.
3. Remixed Guac
It’s hard to argue with a classic like guacamole—consumers love it on everything from sandwiches and burgers to salads, wraps, and, of course, as a dip. Just because it’s ubiquitous, doesn’t mean there isn’t a whole lot of room left to explore. Recent creations from celebrity chefs have seen the addition of everything from mangoes and chiles to ranch dressing and Havarti cheese.4 Even before the guac hits the tableside, some are experimenting with soaking or grilling ingredients to introduce new depths of flavor to this familiar favorite.
